Molasses Cookie Mix

This recipe dates back to the early nineteenth century when plentiful molasses was used to extend or replace rare and valuable sugar. Using ingredients common to the era, we have produced a cookie with all the rich flavor of those baked in country kitchens 150 years ago.

1 bag Molasses Cookie Mix
¼ cup molasses
1 beaten egg
½ cup melted butter

Combine contents of bag with molasses, butter, and a beaten egg. Blend with mixer to form dough. Chill dough for 1 hour. Shape chilled dough into 1″ balls. Roll in sugar and place on lightly greased cookie sheet about 2″ apart. Bake at 350° F for 8 – 10 minutes, or until light brown. Yield: 28 – 30 cookies.
